Because coriander carries a fresh scent of its own that doesn’t overshadow the original flavor of the Shrimp but blends into the sauce, adding another layer to the marinated flavor.
After eating the marinated Shrimp, a refreshing fragrance would linger around your mouth.
But here, they had no coriander. Yes, no coriander, and not even Scallion, which actually wouldn’t have been appropriate either. But if you don’t have it, don’t use it; why put scallion and ginger slices in?!
What made it even harder for her to chew was that they had even added a sweet Chili Sauce—Emma, she couldn’t appreciate this sour and refreshing taste and couldn’t swallow it.
The second dish was stewed fish, again with a sweet and spicy flavor, including kelp and scallion, ginger, garlic, she could no longer even tell what fish it was. The flesh was okay, but she was a bit unaccustomed to the taste. Perhaps the locals all preferred this flavor?
