After tallying everything, the next part of the process was to have the fish cleaned.
And that was something that the servants did after everyone had lunch.
Since hunger was the main reason that brought Calista back to the manor, she needed to fill her belly first before instructing the servants on how she wanted the fish to be cleaned.
After lunch, and taking a walk to digest the food, everyone once gathered again.
With Mammy Lena on the side, Calista couldn’t go anywhere near a knife, so she could only stand there instructing the servants and Ma Susan who had come to join the party.
The first step was to kill the fish since they were all placed in the barrels alive earlier. Rather than slaughtering the few she wanted to cook that day, she decided to slaughter all of them.
This way, tomorrow’s job would be less. There weren’t a lot of workers at the restaurant. And there were other dishes which required cooking, so she didn’t dare risk it.
With seven people doing the job, talking and laughing, the job didn’t even last that long before all the fish were slaughtered.
After slaughtering the fish, the scales were neatly removed and Calista monitored the process closely, as she didn’t want to have any issues just because a scale somehow managed to hang on the skin.
When all the scales were removed, Calista had all the fish cleaned in freshwater thoroughly and once that was done, all the fish that would be cooked tomorrow were put on the side while the ones for that night went through another process.
For the fish to be stewed, Calista had the servants cut them into three pieces. The head, the middle and the tail after removing the fins. She didn’t like seeing those things in her stewed fish at all.
While the others were doing that, another group was responsible for making the marinated mixture for the roasted fish.
Calista brought out unnamed spices from the pantry, which she mixed skillfully without even measuring before adding flour to it.
Once that mixture was done, she brought it outside, where she demonstrated to those responsible how to marinate the fish the way she liked.
Everyone watched attentively without blinking, and once they caught the skill, it was their turn to do so.
While that was occurring, Calista’s attention returned to the cut fish. For the stew, her recipe wasn’t that complicated.
She had the servants dice the onions, tomatoes, green pepper and chillies. This mixture was put into the pot, making a layer of it first. Once that was done, the fish, which had salt added to it on the outside and inside, would be placed on top of the vegetable mixture.
And since she was cooking several fish, Calista picked a bigger pot, so the fish was evenly placed in the pot.
Once this was done, she added some spices, cooking oil, and a big cup of water before instructing the servants to have the pot on the fire.
It would cook on low heat until it was fully cooked.
With that pot over there and getting watched by one servant, the roasted fish became the focus once again.
For these, she had a pot put over the fire with cooking oil.
The pot was left there to heat up until the oil was heated. With the oil hot, someone carefully used the wooden tongs to put the fish into the hot oil, causing the oil to boil up crazily, scaring Mammy Lena to the fullest.
Calista could only chuckle lightly standing a distance away from the pot which Mammy Lena eyed like an enemy.
Fortunately, nothing happened. Just the oil reacting to the small amount of water in the fish.
Since the oil was hot, it didn’t take long before the fish was roasted and golden.
It took less time to roast the fish that stew it.
So once the roasted fish was done, the next dishes were put over the fire as well.
Fish stew to Calista had always walked hand in hand with pap and some vegetables without any tomatoes. Just add the vegetables with oil and salt and it’s done.
Of course, pap just can’t do it on its own for her, since she stated that it was going to be a feast, so she added a few more dishes as well.
Calista had a pot of rice cooked. This way, the guests can enjoy both pap and rice. It was well-balanced.
A salad was prepared with cherry tomatoes, cucumbers, red onions and green pepper.
For everything to be fully cooked and ready, it took a long while. By the time the feast was ready, it was dusk.
Those who should have been there were gathered already. So, the food was served, and the masters were seated at their own table. And this was mainly Calista, Mammy Lena, Ian and the Dickens family.
The servants weren’t sitting with this group but were elsewhere, close where they were having a blast of their own.
At the table, Calista’s saliva was dripping as she looked at the food she hadn’t eaten in a while.
She didn’t like eating fish heads, so on her plate there were two headless roasted fish, and those heads could be seen on Mammy Lena’s and Ian’s plates.
Calista didn’t add the different dishes to one plate but rather had the food served as the following. A plate of pap, stewed fish and vegetables. The size was very reasonable. And another plate of rice, roasted fish, soup and salad.
Inclined more to eating pap. When dinner started, she attacked that plate first.
With everyone focused on eating, they barely talked. So, it was very peaceful for her.
After cleaning the plate of pap, Calista put all her attention on the rice.
Nom. Nom. Nom.
The sounds of eating filled the place.
Crouching next to Calista, Whitey was busy feeding on his fish and his attendance was quite eye glaring and it made Mammy Lena feel complicated. But what else could she do?
Fortunately, the mini feast went particularly well and everyone who attended was bloated and very full.
Later that night, after chatting endlessly, Calista waved the Dickens family goodnight and got ready to rest as well.
Since there weren’t any chores for her to do, sleeping was what she needed to do the most.
Before sleeping, she took her night shower, changed into a comfortable night dress, and wrote that day’s diary entry.
Just like that, another day ended peacefully.
